Traceability is important to us at Macdonald Hotels so we are careful to source only the freshest lamb from approved traditional Scottish farms and hill farms. Raised on a wholesome grass and cereal based diet then matured to enhance tenderness, all our high-quality lamb is therefore full of natural flavour and goodness when it reaches your table.
We serve only the finest corn–fed, free range chicken at Macdonald Hotels. Sourced from France’s leading poultry farms by the Barton Meat Company, these are birds which have been reared to the highest label rouge standard. Animal welfare and a good standard of living is our top priority and the result is succulent, tender chicken with a consistently delectable taste and texture.

Macdonald Hotels’ prime, grass-fed beef is matured for 21 days to intensify its succulence and depth of flavour. We select only the best beef breeds for our juicy steaks, which are hand cut by butchers using time-honoured techniques, ensuring melt-in-the-mouth tenderness while preserving a respected tradition.
All Macdonald Hotels’ milk originates in Scotland’s largest independent dairy, Graham’s The Family Dairy. The Grahams began with horse and cart deliveries of milk, cream and eggs in Stirling and, still committed to their traditions of animal welfare and healthy food, have grown to cater for modern tastes. Our milk is organic and whether served whole, semi-skimmed or skimmed, is always the cream of the crop!
Only premium pork sausages make it to your breakfast plate in a Macdonald Hotel. All our pork is reared outdoors, produced to the British Quality standard Mark, and is sourced from freedom food approved farms around East Anglia. Our delicious breakfasts also include quality Stornoway black pudding, sourced from Macleod & Macleod on the Isle of Lewis and made to a traditional recipe.

We source all our fish and shellfish from Loch Fyne Oysters Ltd, a reputable employee-owned Scottish company whose fish farms work to stringent Soil Association Organic and RSPCA Freedom Food standards. Oysters and mussels are reared onsite and fresh, succulent salmon is hand filleted and dry cured using the finest sea salt, before being kiln-smoked over oak wood chips made from aged whisky barrels for 12 to 36 hours.

All our coffee is Fairtrade, organic and Rainforest Alliance Certified™.
